Seasoning for Pork :
1 tablespoon tamari or light soy sauce
1 teaspoon dark soy sauce 1/3 teaspoon minced garlic
2 teaspoons Chinese rice wine or dry sherry
Broth :
61/2 cups pork stock
salt and white pepper 1/2 teaspoon sesame oil 1/3 cup sliced scallion greens
Method :
Place the pork in a dish and add the pork seasoning ingredients. Mix well and set aside for 1 hour (in the refrigerator in warm weather).
Cook frozen peas in lightly salted water until tender, and drain.
Soften the vermicelli in hot water for 8 to 9 minutes. Drain and place a bundle of noodles in each of six bowls.
Heat the oil in a wok or skillet over high heat and stir-fry the pork until it is lightly browned, about 4 minutes. Spoon over the vermicelli, and add the peas and ginger.
Bring the stock to a boil and season to taste with salt and pepper.
Add the sesame oil. Pour carefully into the bowls, add scallion greens and serve.
