Pan-Fried Lamb Cutlets Oriental Style

 

Ingredients :

400g lamb cutlets
1 potato
1 piece sweet potato
1 tablespoon plain flour
1/2 teaspoon salt and pepper
100g asparagus, blanched until cooked

Marinade
1 tablespoon mixed herbs
Dash of light soya sauce, sugar, pepper, wine and sesame oil

Gravy
8 wolfberries
1/2 teaspoon fried chopped garlic
1/2 teaspoon chopped coriander leaves

 

  1. Mix lamb cutlets with marinade and marinate for 1 hour.
  2. Steam potato and sweet potato until soft. Mash and add in flour, salt, pepper and mix well. Form into long shape and cut into slices. Deep-fry in hot oil until brown. Dish up and arrange on a platter.
  3. Steam the marinated lamb cutlets for 1 hour until tender. Remove and drain. Pan-fry until brown, dish up and arrange together with fried potato on a platter.
  4. Bring the cutlets gravy to boil and thicken with corn flour water. Pour over lamb cutlets and serve.
