Cantonese Recipes : Abalone with Oyster Sauce

 

1 can abalone (drained and cut into 3mm thick slices)
500g round lettuce (quartered each leaf length-wise)
3 tablespoons oyster sauce
1/2 tablespoon soy sauce
1 tablespoon rice wine
1 teaspoon salt
1/2 teaspoon sugar
21/2 cups stock
1/2 teaspoon sesame oil
6 tablespoons cooking oil or lard

Blended
1 tablespoon cornstarch
1 tablespoon water


  1. Combine 11/2 cups stock with 3 tablespoons oil or lard and 1 teaspoon salt. Bring to the boil. Blanch lettuce I this. Drain and arrange on serving plate. Discard stock.
  2. Bring a pot of water to the boil and blanch abalone slices, 5 seconds. Drain and keep aside.
  3. Heat 2 tablespoons oil or lard in frying pan. Immediately add rice wine and remaining stock. Bring to the boil.
  4. Add oyster sauce, soy sauce and sugar. Bring to the boil again. Add abalone and cornstarch-paste, constantly stirring gently.
  5. When thick, add 1 tablespoon heated oil or lard and the sesame oil.
  6. Remove abalone and place over lettuce. Pour the sauce over and serve hot.
