Awabi and Chinese Mushrooms

Cooking time : 5 minutes
Ingredients :
3 oz. canned awabi
3 oz. Chinese mushrooms
1 tablespoon peanut oil
1 roughly cut up medium-sized onion
1 teaspoon ginger sherry
1 teaspoon sesame oil 1/4 pint ( U.S. 5/8 cup) chicken stock
Pinch salt
Pinch Ve-Tsin
Small pinch salt
1 teaspoon soy sauce 1/2 teaspoon cornflour
1 dessertspoon water
Method :
Cut the awabi into thin slices. Drain and dry the mushroom (steams removed), leaving them whole.
Heat the oil and fry the onion in it for 1-11/2 minutes. Add awabi and mushrooms and then the next 7 ingredients.
Cook for 2 minutes. Stir the cornflour, blended with the water, into the mixture and boil for 11/2-2 minutes.
Turn into a heated dish and serve.
