Bitter-mustard Greens with Crab Sauce
   

 

Ingredients

  • 750g bitter mustard greens
  • 250g crabmeat (flaked)
  • 1 dessertspoon alkaline water
  • 2 slices ginger
  • 1½ teaspoons cornstarch blended with 2 tablespoons water
  • 5½ tablespoons lard or cooking oil
  • ½ cup stock

Seasoning Ingredients

  • 1 teaspoon salt
  • ½ teaspoon sugar
  • 1 teaspoon light soy sauce
  • 1½ teaspoon rice wine
 
 
 

Method for Cooking Bitter-mustard Greens with Crab Sauce:

  1. Separate bitter-mustard greens and cut into 4 inch lengths.

  2. Bring a pot of water to the boil. Add alkaline water.

  3. Add bitter-mustard greens and cook 5 minutes. Drain.

  4. Heat 5 tablespoons lard or oil in frying pan and stir-fry ginger slices briefly. Add crabmeat and stir-fry a few minutes.

  5. Add seasoning ingredients and vegetable and stir-fry briefly. Add stock.

  6. Bring to the boil and thicken with cornstarch-paste.

  7. Mix in remaining lard or oil and dish up. Serve hot.
