Cabbage-Rolls-with-Cream-Sauce
   

 

Ingredients

  • 125g chicken meat, diced
  • 125g prawns (shelled and deveined, cut into small pieces)
  • 4 dried mushrooms (soaked and drained, discard stems and dice)
  • 60g canned bamboo shoots (drained and diced)
  • 90g ham (diced)
  • 1 teaspoon salt
  • ½ cup stock
  • 2 chicken livers (boiled and diced)
  • 4 tablespoons green peas
  • 1 dessertspoon cornstarch, blended with 2 tablespoons water
  • 4 tablespoons lard
  • 14 pieces round cabbage leaves
  • 1 teaspoon cornstarch

Sauce Ingredients

  • 1 tablespoon lard
  • 1 teaspoon salt
  • 1½ cups stock
  • 1 tablespoon cornstarch, blended with 2 tablespoons water
  • 3 tablespoons evaporated milk
 
 
 

Method for Cooking Cabbage-Rolls-with-Cream-Sauce:

  1. Separately mix chicken meat and prawns with ½ teaspoon cornstarch each.

  2. Heat lard. Stir-fry chicken and prawns a few seconds, then add mushrooms, bamboo shoots and ham.

  3. Season with salt, pour in stock and bring to the boil.

  4. Add chicken livers and green peas. Stir in cornstarch-paste, reserving ¼ of the amount, and cook 1-2 minutes more. Remove and keep aside.

  5. Bring a large pot of water to the boil. Blanch cabbage leaves to soften.

  6. Cut away hard central part of leaf, keeping leaf oval in shape.

  7. Place 1 tablespoon of the cooked mixture on each leaf. Roll ½ way, tuck in sides and roll up. Seal edges with reserved cornstarch-paste.

  8. Place on heatproof plate open end down, and steam 15 minutes. Dish up.

  9. To prepare sauce. Heat lard. Add stock and salt and bring to the boil. Thicken with cornstarch-paste and mix till smooth.

  10. Mix in milk and remove.

  11. Pour sauce over cabbage rolls and serve hot.
