Cantonese Recipes : Chinese Style Pork Steaks

 

625g pork loin, cut into 1cm slices
1 large onion, sliced
5 tablespoons cooking oil

Marinade Ingredients
1 tablespoon rice wine
1 tablespoon soy sauce
1 tablespoon cornstarch
6 tablespoons water
a pinch monosodium glutamate

Seasoning Ingredients
21/2 tablespoons tomato sauce
1 tablespoon Worcestershire sauce
2 teaspoons sugar
2 tablespoons soy sauce
1/2 tablespoon lemon juice
1 red chili, sliced
a pinch monosodium glutamate
4 tablespoons water

 

  1. Lightly pounded pork slices with meat hammer or back of cleaver. Mix with marinade ingredients and keep aside, 1 hour.
  2. Heat 4 tablespoons oil and fry pork slices, to brown both sides. Drain and keep aside. Reserve 1 tablespoons used oil.
  3. Heat remaining oil and stir-fry onion till soft. Remove half the amount and dish up.
  4. Add seasoning ingredients and pork slices. Cook over high heat till sauce is nearly dry.
  5. Add reserved used oil, toss lightly to mix and dish up over fried onion. Serve hot.
