350g boned chicken breast, cut into thin strips about 5cm
Salt and pepper to taste
2 teaspoons sugar
2 teaspoons chilli sauce
2 tablespoons dry white sauce
1 tablespoon cornflour (cornstarch)
Sufficient vegetable oil for deep-frying
3 eggs, lightly beaten
75ml sesame oil
1 tablespoon chopped parsley
11/2 tablespoons rice wine or dry sherry
11/2 soy sauce
11/2 lemon juice
Method :
Sprinkle the chicken strips with the salt, pepper, sugar, chilli sauce, win and cornflour (cornstarch), rubbing them into the meat with your fingers. Set aside to marinate at room temperature for 11/2hours.
