To prepare pepper-salt. Dry-fry salt over low heat till light brown in color, about 1 minute. Add pepper and mix. Remove and dish up.
Rub oysters with coarse salt and rinse. Drain.
Bring a pot of water to the boil. Blanch oysters in this and drain immediately.
To prepare batter. Beat together all the ingredients till smooth.
Heat oil. Dip oysters individually into batter and deep-fry over medium heat till golden brown.
Drain and dish up. Garnish with coriander leaves.
