Leeks and Pork

Ingredients :
2 tablespoon thin slices raw leg of pork
Salt and Ve-Tsin
White pepper
1 teaspoon ginger sherry
Few drops sesame oil
1 small teaspoon cornflour
1 teaspoon water
1 very thin slice fresh ginger
1 tablespoon peanut oil
4-5 tablespoon leeks* 1/4 teaspoon sugar
3-5 tablespoon hot chicken stock
* The leeks should be cleaned and cut diagonally into 1-inch slices and separated.
Method :
Cut the pork into thin slices, diagonally. (This helps to retain their shape during the cooking). Place the slices in a basin in with a good pinch salt, good pinch Ve-Tsin, a few shakes pepper, 1/2 teaspoon ginger sherry, sesame oil, cornflour and water.
Chop the ginger. Heat the oil in a frying-pan and fry the ginger in it for 1/4 minute.
Add the pork and fry it for 4 minutes. Add the leeks, another good pinch salt, good pinch Ve-Tsin, few shakes pepper, the remaining ginger sherry and a few drops sesame oil.
Add also the sugar and stock and cook for 2-3 minutes. Turn into a heated dish and serve.
Note There is hardly any liquid left when this dish is ready.
