Onion and Tomatoes in Simple Sauce

4 minutes
Cooking time : 8 minutes
Ingredients :
1 medium-sized onion
2 tomatoes*
1 tablespoon peanut oil
Pinch each salt, sugar and Ve-Tsin
1/2 teaspoon soy sauce
4 tablespoon hot chicken stock
3/4 teaspoon cornflour
1 tablespoon water
1 onion 'flower'
*Choose firm and ripe tomatoes.
Method :
Roughly chop the onion. Cut the firm tomatoes into eighths and set aside. Heat the oil in a frying-pan and fry the onion in it for 4 minutes, tossing it about.
Add a pinch salt, pinch sugar, pinch Ve-Tsin, soy sauce and chicken stock and cook for further 2 minutes.
Add the tomatoes and gently move them about so as not to break them up. Blend the cornflour with the water, stir it in and boil for 11/2 minutes.
Turn into a heated serving dish and garnish with the onion 'flower'.
