750g chicken meat, skinned
1-2 stalks coriander (use leaves only)
2-3 red chilies (cut into thin strips)
2 large sheets greaseproof or heavy-duty cellophane paper (cut into 13cm squares)
cooking oil for deep-frying
Marinade Ingredients
11/2 teaspoons salt
1 teaspoon sugar
1 teaspoon rice wine
a pinch monosodium glutamate
Method :
Cut chicken meat into very thin slices, about 6 x 3 cm.
Mix with marinade ingredients and keep aside 20 minutes.
On each piece of greaseproof or cellophane paper, place 1 piece chicken meat, 1 strip red chili and a coriander leaf. Wrap up envelope style. Tuck in ends.
Heat oil for deep-frying and fry chicken packages over low heat, 11/2 minutes.
