Cantonese Recipes : Poached Fish in Sour Sauce

 

1 whole fish (1kg)
9 tablespoons cooking oil
1 tablespoon rice wine
20 cups water
a dash black pepper powder
5cm piece ginger

Shredded
1 stalk spring onion (use white part only)
1/2 a red chili
1/4 of a green bell pepper

Blended
1 teaspoon cornstarch
1 tablespoon water

1 teaspoon sesame oil
a few sprigs coriander leaves

Marinade Ingredients
1 tablespoon salt
1 tablespoon rice wine
2 slices ginger
2 stalks spring onions, shredded

Seasoning Ingredients
7 tablespoons vinegar
6 tablespoons sugar
3 tablespoons tomato sauce
3 tablespoons water
1 teaspoon salt

 

  1. Clean well the fish and rub with marinade ingredients. Keep aside, 20 minutes.
  2. Heat 1 tablespoon oil in a large, deep pot. Add rice wine and water and bring to the boil. Place fish in water (it should cover fish) and cover the pan. Bring to the boil again. Turn off heat and leave fish in hot water, 20 minutes, without lifting the lid.
  3. Carefully remove fish to serving plate and sprinkle with black pepper.
  4. Heat 4 tablespoons oil till hot and smoking. Pour over fish.
  5. Heat remaining oil and stir-fry shredded ingredients till fragrant.
  6. Add seasoning ingredients and bring to the boil. Thicken with cornstarch-paste.
  7. Pour over fish, garnish with coriander leaves and serve immediately.
