Steamed Halibut with Vegetable

Cooking time : 15 minutes
Ingredients :
2 small slices halibut
3 thin slices fresh ginger
1 soaked Chinese mushroom
1 spring onion
2 tablespoons shredded Szechwan cabbage
1 dessertspoon shredded cooked lean pork
Little pepper
Pinch each sugar and salt
Good pinch Ve-Tsin
1 teaspoon sesame oil
1 dessertspoon soy sauce
1 teaspoon cornflour
1 dessertspoon water
1 onion 'flower'
Method :
Place the trimmed halibut ready on a plate. Cut the ginger and mushroom (steam discarded) into thin strips. Cut on the slant the spring onion into 3/4 inch pieces. Add the cabbage, pork and seasonings, then the oil, soy sauce and cornflour, blended with the water. Mix well together. Heap on the halibut slices and steam for 10 -15 minutes. Transfer carefully to a heated serving. Remove skin and bones. If necessary, rearrange the vegetables. Garnish with the onion 'flower'.
