Mix together the lamb shreds and marinade ingredients and keep aside, 20 minutes.
Heat oil and deep-fry over medium heat till color changes. Drain.
Drain off all but 4 tablespoons oil from pan. Reheat and briefly stir-fry ginger and spring onion.
Add all the shredded vegetables and stir-fry about 1 minute.
Return fried lamb shreds to pan and add seasoning ingredients. Toss lightly to mix.
