Stir-Fried Lamb with Assorted Vegetable Shreds
   

 

Ingredients

  • 500g lamb (shredded)
  • 2.5cm piece ginger (shredded)
  • 1 stalk spring onion (use white part only, shred)
  • 125g canned bamboo shoots (drained & shredded)
  • 125g carrots (parboiled & shredded)
  • 90g celery (shredded)
  • 60g green bell pepper (shredded)
  • Cooking oil for deep-frying

Main Ingredients

  • 1 tablespoon soy sauce
  • ¼ teaspoon salt
  • ½ teaspoon sesame oil
  • A pinch black pepper
  • A dash monosodium glutamate
  • ½ tablespoon cornstarch
  • 2 tablespoons water

Seasoning Ingredients

  • 1 teaspoon soy sauce
  • ½ teaspoon sugar
  • ¼ teaspoon sesame oil
  • A pinch salt
  • A dash monosodium glutamate
  • 1 teaspoon cornstarch
  • 1 tablespoon water
 
 
 

Method for Cooking Stir-Fried Lamb with Assorted Vegetable Shreds:

  1. Mix together the lamb shreds and marinade ingredients and keep aside, 20 minutes.

  2. Heat oil and deep-fry over medium heat till color changes. Drain.

  3. Drain off all but 4 tablespoons oil from pan. Reheat and briefly stir-fry ginger and spring onion.

  4. Add all the shredded vegetables and stir-fry about 1 minute.

  5. Return fried lamb shreds to pan and add seasoning ingredients. Toss lightly to mix.

  6. Dish up and serve hot.
