Cantonese Recipes : Sweet Almond Curd Soup

Ingredients :

7g seaweed gelatine
3 cups water
¼ cup evaporated milk
½ cup sugar
½ teaspoon almond extract
1 can mandarin-orange segments

Syrup Ingredients
1 ½ cups sugar
6 cups water
½ teaspoon almond extract

Method :

To prepare syrup. Bring the ingredients to the boil and cook till sugar dissolves.
Cool and chill well in refrigerator.
Soak seaweed gelatine in water for 30 minutes and drain.
Bring the 3 cups water to the boil. Add seaweed gelatine and cook till dissolved.
Add evaporated milk, sugar and almond extract, and stir till sugar dissolves.
Remove from heat, pour into a tray and allow to set.
Cut into 2.5cm cubes.
Pour chilled syrup into serving bowl, add almond cues and tinned fruit. Serve.
