Cantonese Recipes : Sweet-Sour Fish

 

1 whole fish, 1kg
2 egg yolks, lightly beaten
cornstarch to coat
2 cloves garlic, chopped
1/4 of green bell pepper, shredded
1 stalk spring onion (use white part only; shred)
cooking oil for deep-frying

Marinade Ingredients
1 tablespoon rice wine
2 stalks spring onions, crushed
2 slices ginger
1 teaspoon salt
1/4 teaspoon black pepper

Sauce Ingredients
6 tablespoons sugar
6 tablespoons vinegar
6 tablespoons tomato sauce
6 tablespoons tomato sauce
6 tablespoons water
1/2 teaspoon salt
11/2 teaspoons cornstarch

Garnish
1 stalk spring onion (use white part only; shred)
4cm piece ginger, shredded
1/2 a red chili, shredded
a few sprigs coriander leaves

 

  1. Clean well the fish. Make diagonal cuts on both sides, down to the bones. Mix together the marinade ingredients and rub over fish, making sure to reach flesh inside cuts. Keep aside 30 minutes.
  2. Dip in egg yolk and coat with cornstarch.
  3. Heat oil and deep-fry fish over medium heat for 5-6 minutes, till batter is crisp. Drain and dish up. Reserve used oil.
  4. Heat 2 tablespoons of the used oil and stir-fry garlic, bell pepper and spring onion till fragrant.
  5. Add sauce ingredients and bring to the boil. Mix in 1 tablespoon used oil and pour sauce over fish.
  6. Garnish and serve immediately.
