Spicy Rice & Bean Pilaff

This recipe can either be served as a side dish or vegetarian main course.

Serves : 6-8
Preparation time : 25 minutes
Cooking time : 50 hours

Ingredients :

4 tablespoons oil
225g long grain rice
1 onion, finely chopped
1 green pepper, seeded and chopped
1 teaspoon each ground cumin and coriander
Dash tabasco sauce
Salt
1 litre vegetable stock
450g canned red kidney beans, drained
450g canned tomatoes, drained and coarssely chopped
Chopped parsley

Method :

Heat the oil in a casserole or large saucepan.
Add the rice and cook until just turning opaque. Add the onion, pepper and cumin and coriander. Cook gently for a further 2 minutes.
Add the Tabasco , salt, stock and beans and bring to the boil. Cover and cook for about 45 minutes, or until the rice is tender and most of the liquid is absorbed.
Remove from the heat and add the tomatoes, stirring them in gently. Leave to stand, covered, for 5 minutes.
Fluff up the mixture with a fork and sprinkle with parsley to serve.
