Heat the oil in a large pan. Stir-fry the ground ingredients, cinnamon stick, star anise, dried assam slice, curry powder and turmeric powder till fragrant.
Put in chicken, potatoes and seasonings. Cover for 5 minutes.
Add all the vegetables and coconut milk. Stir occasionally till it boils.
As soon as the vegetables are tender, mix in the dhal and mustard seeds. Stir thoroughly, then dish up.
