Mint Soup

4 eggs
1 bunch of mini leaves
11/2 rice bowls of water
2 tablespoons cooking oil
salt
pepper
Preparation :
Discard mint leaf-stalks. Wash and drain leaves.
Beat eggs.
Method :
Put mint leaves into beaten eggs.
Heat frying pan. When hot, add all and pour in the mixed egg and mint leaf mixture.
Fry for 1-2 minutes. Add 11/2 rice bowls of water and salt to taste to fried eggs and mint leaves.
Bring to boil. Remove from flame and serve.
Note:
Do not fried egg and mint leaves mixture till cooked. The idea is to fry them lightly for under 2 minutes so that egg and mint leaves will stick together.
If you like, sprinkle some fried sliced shallots into the soup before serving. This soup is traditionally eaten to remove wind from the stomach.
