Nyonya Recipes : Roti Babi

 

6 slices overnight bread
2 eggs

Stuffing Ingredients
100g pork
1 tablespoon coriander
10 peppercorns
3/4 inch cekur / sar keong
1 teaspoon dark soya sauce
1 teaspoon light soya sauce
4 shallots
2 pips garlic
1/4 teaspoon salt
monosodium glutamate / seasoning (optional)
5 tablespoons cooking oil
2 teaspoons flour



Preparation :
  1. Grind coriander, peppercorns and cekur finely.
  2. Pound shallots and garlic finely.
  3. Mince pork finely.
  4. Beat eggs in a little flour.
  5. Make seep slits along the sides of the bread using a sharp knife.

Method :

  1. Heat 5 tablespoons of cooking oil. When hot, add pounded onions and garlic and fry till soft. Add pounded coriander, peppercorns and cekur as well as dark and light soya sauce.
  2. Stir over low heat until fragrant. Add minced pork and stir until cooked.
  3. Dish out and stuff bread with mixture.
  4. Heat 11/2 rice bowls of oil till hot. Dip both sides of the bread in the beaten egg and fry at low heat until both sides are slightly brown.
  5. Dish out, drain oil and serve.

Note:
Overnight bread is used because fresh bread is too soft to make the slits for stuffing.
