75g salt fish flesh
1 big red onion
2 fresh red chilies
1 level teaspoon shrimp paste (belacan)
1/2 tablespoon tamarind paste
pepper
1 tablespoon sugar
monosodium glutamate / seasoning (optional)
dash of light soya sauce
Preparation :
Soak salt fish in water for a few minutes. Drain and slice finely.
Cut big onion into 4 or 5 pieces after slicing the head off.
Slice chilies into 2 or 3 pieces lengthwise.
Add 1 rice bowl of water to tamarind paste and strain. Set juice aside.
Method :
Fry salt fish in sufficient hot oil. When cooked, dish out fish. Remove oil.
Add 3 tablespoons of fresh oil to frying pan. When oil is hot fry onions till transparent.
Add shrimp paste and crumble it when frying.
When shrimp paste is fragrant, add chilies, sugar and tamarind juice. Stir and taste for sweetness.
Add monosodium glutamate, fried salt fish, pepper and dash of light soya sauce. Serve with rice.
Note:
The sweetness in the dish should be a subtle one, so do not add too much sugar.
