Stingray Fried in Salted Cabbage

 

300g stingray
300g slated cabbage
2 fresh red chilies
3 shallots
3 pips garlic
thumb-sized piece ginger
1 tablespoon sugar (optional)
1 tablespoon pepper
1/2 tablespoon thick dark soya sauce
7 tablespoons cooking oil

 

Preparation :
  1. Slice chilies finely and discard seeds.
  2. Slice shallots finely and mince garlic.
  3. Cut stingray into small pieces. Wash and drain.
  4. Cut salted cabbage into small pieces or shreds. Soak in water for 10 - 15 minutes if it is the very salty variety. Drain.

Method :

  1. Heat frying pan. Add oil. When oil is hot, add ginger, shallots and garlic. Stir till light brown.
  2. Add stingray. Stir for 3 minutes. Add salted cabbage, stir till fragrant.
  3. Add water for gravy and also thick dark soya sauce. Add pepper then sugar
  4. Stir, then cover till salted cabbage is soft. Test gravy for sweetness and saltiness. Adjust taste.
  5. When ready, the salted cabbage should be wet and not too much gravy should remain. If it is too dry, the fish will not taste good.
  6. Adjust by adding water if required. Serve hot.
