Sweet Sour Crab

600g land crab
thumb-sized ginger, shredded
3 shallots
4 pips garlic
1 big fresh red chili
1 tablespoon light soya sauce
1/2 tablespoon sugar
1 tablespoon vinegar
1 stalk Chinese celery
5 tablespoons oil
1 teaspoon cornflour
Preparation :
Remove shell of crab. Clean and cut into quarters.
Slice shallots and mince the garlic.
Slice chili at a slant.
Dissolve 1 heaped teaspoon cornflour in 5 tablespoons water. Add 1 tablespoon vinegar and 1 tablespoon sugar. Stir well.
Cut Chinese celery into 5cm lengths.
Method :
Heat pan, add 5 tablespoons oil. When oil is hot, add garlic, ginger and shallots. Stir till soft.
Add crab, stir a while and cover, keep stirring often until crabs turn reddish and is cooked. Remove cover.
Add 1/2 rice bowl water, 1 tablespoon light soya sauce, 2 tablespoon tomato sauce, sliced chili and Chinese celery. Stir a while then add the cornflour solution. Quickly stir until gravy starts to thicken.
Remove heat and dish out. Serve.
