Steamed Garoupa Rolls and Asparagus

1 fresh garoupa
150g prawn paste
5 asparagus, trimmed, blanched till cooked
some yellow chives, blanched till soft
Ingredients A
1 dried scallop, soaked, shredded
1 black mushroom, soaked, diced
A little crab roe
Dash of salt and pepper
1 tablespoon cooked oil
Method :
Combine prawn paste and ingredients A and mix well.
Clean fish, remove bones and cut fish meat into thin equal slices. Spread prawn paste on top and tight with yellow chives. Arrange on a platter and place fish head in the centre. Steam for 6 minutes. Drizzle cooked oil on top, garnish with asparagus and serve hot.
