Stir-Fried Garoupa and Fish Kelabu

Ingredients A
1/2 stalk celery, sliced
1 red chilli, sliced
1/2 green capsicum, cut into cubes
Ingredients B
50g onion shreds
50g cucumber shreds
Seasoning A
A little salt, sugar and shao xing wine
Seasoning B
1 tablespoon lime juice
1/2 tablespoon sugar
1/2 teaspoon oyster sauce
3 chili padi, chopped
Method :
Cut half of the fish meat into piece and the rest into strips. Deep-fry head and tail until crispy, dish up and arrange onto a platter.
Heat up oil and deep-fry fish meat piece for 1 minute. Dish up. Put in fish strips and deep-fry till golden brown and crispy. Dish and drain.
Leaves 1 tablespoon oil in wok and sauté all ingredients A until fragrant. Add in fish piece and seasoning A and stir well. Dish up.
Put fried fish strips on a platter, mix all ingredients B and seasoning B, stir well. Arrange (3) and fish head and tail on the same serving platter. Serve.
