Clear Soup with Chicken or Seafood

cooking time : 10 minutes
Ingredients :
11/2 liters chicken stock or 3 chicken stock cubes in 11/2 liters boiling water
4 cloves garlic, sliced
250g fresh chicken breast or seafood, cut into strips
60g coarsely chopped lettuce
3 tablespoons soy sauce
4 tablespoons fish sauce
pinch of freshly ground black pepper
2 sprigs coriander leaves, to serve
2 spring onions, green tops cut into lengths, to serve
1 teaspoon Crispy Fried Garlic, to serve
Method :
Bring the chicken stock and garlic to a boil in a stockpot over high heat. Then reduce the heat to medium and let the mixture simmer for about 3 minutes.
Add the chicken or seafood, lettuce, soy sauce, fish sauce and black pepper and simmer for 5 more minutes, stirring constantly, until the chicken is cooked.
Serve hot, garnished with the coriander leaves, spring onions and Crispy Fried Garlic.
Notes : Crispy Fried Garlic is readily available in packets or jars in most wet markets, supermarkets and provision shops. To make it at home, thinly slice several cloves of garlic as desired and stir-fry in a few tablespoons of hot oil over low heat for 1 to 2 minutes, stirring constantly, until golden brown and crispy. Remove with a slotted spoon and drain the excess oil on paper towels.
