Braised Tau Kwa with Soy Sauce

4 pieces (600g) soft tau kwa
300g pork belly
4 eggs
2 large heads smoked garlic
1200ml water
Seasonings :
1 tablespoon light soy sauce
4 tablespoons dark soy sauce
a little salt
Method :
Soak tau kwa in salted water then cut each into 4 pieces. Cut pork into 1 inch long pieces. Boil eggs then remove shells. Rinse garlic.
Heat 4 cups of oil and deep-fry tau kwa till golden brown.
Using 2 tablespoons of oil, fry pork briefly. Add light and dark soy sauce to mix well. Pour in a little water to simmer briefly. Transfer into a pot and add garlic, eggs and tau kwa. Add water and a little dark soy sauce for colour. Simmer over medium heat for 20 minutes. Season with salt.
