Tofu and Snow Peas

1 box (300g) pressed tofu
4 mushrooms
80g winter bamboo shoots 1/2 carrot
3 slices ham
1 stalk spring onion
5 slices young ginger
1 teaspoon chopped spring onion
1 teaspoon minced garlic
60g snow peas
Seasonings :
1/2 teaspoon chicken stock seasoning 1/2 sesame oil
1 cup water
1 tablespoon potato starch (mixed with 2 tablespoons water)
Method :
Cut tofu into square blocks. Soak mushrooms and cut them, along with winter bamboo shoots and carrot, into slices. Cut ham into small pieces and spring onion into sections.
Heat 4 cups of oil and deep-fry tofu till golden brown. Remove and drain oil.
Using 3 tablespoons of oil, fry ginger, chopped spring onion and garlic till fragrant. Add ham, mushrooms, winter bamboo shoots and carrots to fry briefly. Mix well chicken stock seasoning, sesame oil and water then pour into the pan. Cover and cook well.
Add tofu and snow peas to fry well then thicken with potato starch water. Scatter spring onion sections before serving.
