In hot water, soak mushrooms for 40 minutes then squeeze out liquid, remove stems and chop mushroom tops very finely. Place mushrooms, spring onions and pork in a bowl. Add fish sauce, eggs and salt and pepper to taste and combine thoroughly.
Preheat oven to 200°C. Grease a loaf tin, then add meat mixture, patting down firmly. Cover with foil, sealing well. sit loaf tin in a large roasting pan, pour hot water until halfway up the loaf tin and place in oven for about 1 hour or until done. Test with a knife which should come out cleanly.
