Baked Pork Loaf


Serves 6

Ingredients

  • 12 dried mushrooms
  • 8 spring onions, finely chopped
  • 1kg minced pork
  • 2 tablespoons fish sauce
  • 5 eggs, beaten
  • Pinch salt
  • Ground black pepper

To Garnish

  • Coriander leaves
 

Method for Cooking Baked Pork Loaf:

  1. In hot water, soak mushrooms for 40 minutes then squeeze out liquid, remove stems and chop mushroom tops very finely. Place mushrooms, spring onions and pork in a bowl. Add fish sauce, eggs and salt and pepper to taste and combine thoroughly.

  2. Preheat oven to 200°C. Grease a loaf tin, then add meat mixture, patting down firmly. Cover with foil, sealing well. sit loaf tin in a large roasting pan, pour hot water until halfway up the loaf tin and place in oven for about 1 hour or until done. Test with a knife which should come out cleanly.

  3. Allow the loaf to cool a little, then run knife around the sides of the tin and turn out. Slice and garnish with coriander.
