Combine sherry, salt, sugar and garlic. Add pork, combine and let stand for 2 hours.

Add ground rice, fish sauce and peanut oil, mix well then form mixture into small balls, about walnut size. Put balls on to bamboo skewers, squeezing tightly so balls adhere to skewers.
- Barbecue or grill, turning often, until pork is cooked.
