Coconut Pork Stew

 

Ingredients

  • 1kg boneless pork, cut into large cubes
  • 4 tablespoons vegetable oil
  • 2½ cups coconut milk
  • 6 hard-boiled eggs
  • 3 spring onions and ½ cup bean sprouts to garnish
  • Nuoc cham dipping sauce

Marinade

  • 3 cloves garlic, crushed
  • Pinch salt
  • 1½ tablespoons sugar
  • 4 tablespoons fish sauce
 

Method for Cooking Coconut Pork Stew:

  1. Combine marinade ingredients and add pork, stirring so pork is completely covered. Marinate for at least 2 hours.

  2. Heat oil in a heavy-based pan and add pork cubes, turning to sear all sides. Drain off any oil, add coconut milk and bring almost to the boil. Reduce heat, skim off surface scum and simmer, covered for about 45 minutes, until tender.

  3. Peel hard-boiled eggs, add to pan and cook for about 10 minutes. Serve with dipping sauce and garnished with 3 spring onions cut into narrow 5cm strips and ½ cup of bean sprouts.
