Deep Fried Chicken Meat in Red Taro Curd


Ingredients

  • 300g chicken fillet
  • Carrot shreds
  • Cucumber shreds
  • 1 teaspoon honey
  • A pinch of Chinese parsley

Marinade

  • 1 teaspoon crushed ginger
  • 1 teaspoon crushed garlic
  • 1 teaspoon crushed shallot
  • 1 tablespoon red taro curd
  • 1 teaspoon granulated sugar
  • ½ teaspoon light soy sauce
  • ¼ teaspoon dark soy sauce
  • A pinch of sesame oil

*Mix the above ingredients well.

 

Method for Cooking Deep Fried Chicken Meat in Red Taro Curd:

  1. Wash chicken fillet and wipe dry. Cut into cubes for 1½ inches. Add marinade ingredients. Mix well and marinate for 1 hour.

  2. Wipe away marinade ingredients. set aside. Add 1 teaspoon of honey to chicken. Mix well. Deep fry over medium heat until cooked. Dish up and drain well. Then arrange on plate. Garnish with carrot, shreds, cucumber shreds and Chinese parsley.

  3. Add water, sugar and sesame oil to marinade ingredients for chicken. Bring to the boil over low heat. Try the taste. Strain and form dipping sauce of chicken.
