Fish with Tomato and Dill


Serves 6

Ingredients

  • 3 medium tomatoes
  • 750g freshwater fish fillets
  • 6 cups chicken stock
  • 2 tablespoons fresh dill, chopped
  • Salt and pepper
  • Extra fresh dill
 

Method for Cooking Fish with Tomato and Dill:

  1. Chop tomatoes into wedges. Cut fish into large bite-sized chunks. Boil stock . add fish, and turn down to simmer for 6 minutes. Skim surface froth and add tomatoes, dill and salt and pepper to taste.

  2. Simmer a little longer until fish is cooked but not breaking up. Serve in large bowl or individual bowls and garnish with fresh dill.

Note: This chunky soup is a good starter or as part of a multi-course Vietnamese meal. It also makes a family lunch or dinner when served with fresh baguettes and a salad.
