Pork Chops and Vietnamese Noodles in Lemongrass
Ingredients
4 pieces pork chops
225g Vietnamese noodles
A pinch of trimmed green bean sprouts
A pinch of carrot shreds
A pinch of cabbage shreds
A pinch of spring onion with oil
1 cup stock
Marinade
2 tablespoons fish gravy
1 tablespoon crushed lemongrass
1 teaspoon crushed garlic
1 teaspoon crushed shallot
1 teaspoon caltrop starch
¼ teaspoon granulated sugar
2 teaspoons oil
Sauce Ingredients
2 tablespoons fish gravy
1 tablespoon lime juice
1 tablespoon cold boiled water
½ tablespoon granulated sugar
1 teaspoon crushed chili
Method for Cooking Pork Chops and Vietnamese Noodles in Lemongrass:
Pat pork chops with knife. Add marinade ingredients. Marinate for 3 hours. Wipe away marinade ingredients. fry or deep fry until cooked.
Wash trimmed sprouts. Drain well and place in a big bowl.
Bring stock to the boil. Blanch Vietnamese noodles until cooked. Drain well. put on top of trimmed sprouts. Then put pork chops onto noodles. Garnish with carrot shreds, cabbage shreds and spring onion with oil. Pour sauce onto noodles when serve.
