Mix together rice flour, salt, sugar, coconut milk, water and turmeric until the batter is smooth. Set aside.
Wash and dry prawns and chop roughly. Wash bean shoots and set aside.
Dice the pork or chicken.
Heat a large frying pan and pour in a little oil. Add pork, onion and prawns, and cook, stirring constantly, until prawns change colour and pork is cooked through.
Pour enough batter over mixture to cover ingredients, top with some bean shoots and cover pan with a lid. Cook for 2 minutes until crisp. Turn over and cook the other side until golden.
