Stewed Trotter in Vietnamese Style
Ingredients
1 pig's trotter (about 900g)
2 stalks lemongrass (patted)
3 Laos root slices
2 dried chilies
8 cloves garlic
6 cloves shallot
1 tablespoon wine
½ cup coconut juice
Seasoning
½ cup fish gravy
1 tablespoon granulated sugar
4 cups water
Method for Cooking Stewed Trotter in Vietnamese Style:
Remove hair from trotter. Chop up and wash. Parboil in boiling water for 5 minutes. Dish up and rinse.
Heat 2 tablespoons of oil. Sauté dried chilies, garlic, shallots, lemongrass and trotter until fragrant. Sizzle wine. Add seasoning and Laos root. Bring to the boil. Transfer to an earthen pot. Stew until tender (turn trotter several times to avoid from sticking to pot). Stir in coconut juice. Try the taste. Serve in pot.
