Herb and Coconut Rice

1 cup grated fresh coconut
2 tablespoons oil
40g dried salted fish, rinsed and pat dry
2 cups cooked white rice
1 cup combined finely shredded kaffir lime leaves, fresh coriander, fresh mint and fresh curry leaves
1 stalk lemon grass, trimmed, thinly sliced
5 shallots, thinly sliced
2cm fresh ginger, finely grated
1cm fresh galangal, finely grated
1cm fresh turmeric root, finely grated
salt and pepper to taste
lime slices and extra fresh coconut to serve
fresh coriander leaves to garnish
Method :
Place coconut in a pan, cook without any oil, stirring, over a slow fire, until a deep golden brown. Remove; cool for 5 minutes.
Heat oil in a small pan. Add salted fish; cook, stirring, until lightly browned, about 5 minutes. Drain on absorbent paper; cool for 5 minutes. Shred and set aside.
Combine rice, coconut, fish, herb leaves, lemon grass, shallots, ginger, galangal and turmeric in a large bowl. Season with salt and pepper; mix well.
Serve rice with lime slices and fresh coconut; garnish with fresh coriander.
