Stewed Chicken

Cooking time : 12 minutes
Ingredients :
1kg chicken or 600g streaky pork
1/2 teaspoon salt
90ml cooking oil
180g shallots, peeled and ground
3 bulbs garlic, peeled and ground
2 tablespoons preserved soy beans
4-5 dried Chinese mushrooms, soaked to soften
500ml water
1 teaspoon dark soy sauce
3 potatoes, peeled and quartered
1/2 teaspoon salt
Method :
Cut chicken into small pieces. If using pork, cut into 5 x 2.5cm pieces. Season meat with salt and leave aside.
Heat oil in a wok and fry ground shallots and garlic for 2 minutes, then add preserved soy beans and fry over low heat until fragrant.
Put in mushrooms, then meat and stir-fry for a few minutes. Add water and dark soy sauce and bring to the boil. Lower heat and simmer, covered, for 15 minutes, then add potatoes and salt.
Simmer gently for a further 12-15 minutes until meat is tender and sauce is quite thick. Serve hot.
