Method :
Boil potatoes for 10 minutes or until just tender. Drain and set aside.
Pan-fry beef bacon and onion until golden., about 3 minutes. Remove and sprinkle over cooked potatoes.
In the same pan (with leftover beef bacon oil), whisk together water, cream, vinegar, mustard and sugar. Bring to boil. Season to taste.
Pour the warm dressing over potatoes and toss lightly. Garnish with chopped chives.
