Crisp crumbled bacon, toasted almonds and tart apples transform an ordinary spinach into something special.

Ingredients :
1/3 cup sliced almonds
2 large bunches spinach (about 11/2 lbs. total)
1 large apple
6 strips bacon, crisply cooked, drained, and crumbled
3 tablespoons sliced green onions (including tops), tear into bite size pieces.
1/2 cup olive oil or salad oil
6 tablespoons tarragon wine vinegar or white wine vinegar
1/4 teaspoon salt
2 teaspoon sugar
1 teaspoon dry mustard
Dash of pepper

Method :
Spread almonds in a shallow pan and toast in a 350กใ oven for about 8 minutes or until lightly browned; set aside.
Tear spinach into bite-size pieces and place in a large serving bowl. Core and dice apple; add to spinach, along with almonds, bacon and onions.
In a small bowl, combine oil, vinegar, salt, sugar, mustard, and pepper; mix well. Pour over salad and toss gently to coat. Serve.
