Ingredients :
1 large green papaya
2 bird's-eye chillies, minced
3 tablespoons fish sauce
3 tablespoons juice from large green limes
400g small fresh prawns, blanched
8-10 cherry tomatoes or 1 large tomato, sliced
1 spring onion, thinly sliced
1 sprig coriander leaves roughly chopped
5 shallots, thinly sliced

Method :
- Peel the papaya, quarter it lengthwise and remove the seeds and soft centre. Grate the papaya into thin strands using a mandolin, and place in a serving bowl.
- Combine the chillies, fish sauce and lime juice in a small bowl and pour the mixture over the papaya.
- Add the prawns, tomatoes, spring onion, coriander leaves and shallots, and toss well.
- Serve immediately with steamed rice.
