Ingredients :
300g fresh squid
2 shallots, thinly sliced
2 bird's-eye chillies, minced
1 small onion, thinly sliced
1 tablespoon finely sliced young ginger
21/2 tablespoons lime juice
11/2 tablespoons fish sauce
1 medium tomato, cut into wedges
1 spring onion, chopped
1 sprig coriander leaves, chopped
20g mint leaves, chopped
1 head (100g) leafy green lettuce, torn

Method :
- Clean the squid and cut into bite-sized pieces. Blanch the squid in boiling water very briefly until it turns opaque. Remove immediately and drain, then place on a serving platter.
- Combine the shallots, chillies, onion, ginger, lime juice and fish sauce. Add the tomato wedges, spring onion, coriander and mint leaves.
- Top with the torn lettuce and serve immediately with steamed rice.
