Ingredients :
80g glass noodles, soaked in hot water for 10 minutes
20g toasted peanuts, chopped
Few sprigs coriander leave, roughly chopped
50g shallots, sliced and fried till crisp
12 prawns, boiled for 5 minutes, cooled and shelled
Lime wedges to garnish
Chilli Dressing :
5 tablespoons sweet chilli sauce (use bottled Thai sweet sauce)
2 tablespoons lime juice
2 teaspoons fish sauce
1 tablespoons peanut oil
1 large red chilli, sliced
Salt and pepper

Method :
Pour chilli dressing into the glass noodles and refrigerate for at least 20 minutes.
Toss the glass noodles with toasted peanuts, coriander leaves and fried shallots.
Pile glass noodles onto a plate. Top with cooked prawns. Garnish with lime wedges. Serve at once.
