Asparagus with Coconut

 

Preparation time : 20 minutes
Cooking time : 10 minutes
Serves : 5


Ingredients :

3 bunches asparagus, trimmed and cut into 5cm lengths
1/4 cup desiccated coconut, toasted and chopped finely
50g prawns
1 large onion, sliced thinly
1/4 cup coconut milk
salt and pepper to taste

Dressing (Mixed well)
2 red chilies, finely chopped
2 tablespoons lime juice
2 teaspoons sugar
1/2 teaspoon salt

 

  1. Bring 1 litre water to boil in a pot. Add 1 teaspoon salt. Once boiling, add asparagus; allow to cook for 1 to 2 minutes. Remove; transfer to a large bowl of cold water. Stand for 2 minutes; drain well.
  2. Bring same pot of water for blanching asparagus to boil again. add prawns to boiling water; cook for 3 minutes or until prawns turn pink. Remove and cool for 3 minutes. Shell prawns and chop finely.
  3. Combine prawns, asparagus, coconut and onion in a large bowl; add dressing. Toss gently to combine.
  4. Serve asparagus mixture drizzled with coconut milk; season with salt and pepper.
