Bean Sprouts with Salted Fish

Serves : 4-5
Ingredients :
100ml cooking oil
45g salted fish (threadfin), preferably washed and finely sliced
3 cloves garlic, peeled and minced
1/2 tablespoon light soy sauce
1/2 tablespoon sesame oil
300g bean sprouts, washed and drained
1 red chili, seeded and cut into strips
1 spring onion (scallion), split and cut into 5 cm lengths
1 sprig coriander (cilantro) leaves
Method :
Heat half the oil in a wok until hot. Put in salted fish and fry over low heat until crisp and light golden brown. Drain and leave aside. Discard oil.
Heat remaining oil in the same wok and lightly brown garlic. Remove and place on a serving dish. Mix with light soy sauce and sesame oil.
Bring half a saucepan of water to a rapid boil. Put in bean sprouts and scald for a few seconds.
Drain well and place in dish of prepared sauce. Mix to combine ingredients, then sprinkle with fried salted fish. Garnish with red chili, spring onion and coriander. Serve hot.
