Crispy Purple Yam Mash Wrapped With Maize and Vegetarian Ham

 

1 pc spring roll skin
300g yam
50g corn
1 pc vegetarian ham (cut into 5 strips)

 

  1. Cut yam into small pieces and steam for 20 minutes to soften it.
  2. Mash steamed yam to make paste.
  3. Spread yam paste evenly onto the spring roll skin, set aside.
  4. Boil corn until cooked.
  5. Put cooked corn and vegetarian ham strip onto spring roll skin and wrap into roll.
  6. Heat up oil, deep-fry till golden brown and slice into small pieces and serve.
  1. Excessive skin contact with uncooked yam fluids can cause the skin to itch. If this occurs, a quick wash with cold water will stop the itching.
  2. You can put the yam roll into the refrigerator for 5-10mins so that it will not crack open so easily when deep-frying.
