Fried Yee Mee

 

350g dried yee mee
100g green mustard leaves (choy sum)
38g vegetarian meat* (thinly sliced)
38g mushrooms (soaked and sliced)
20g fried gluten* (thinly sliced)
1 piece fuchook (fried and tear into pieces)

Seasoning :
1 tablespoon soy sauce
1/2 teaspoon sugar
1/2 teaspoon salt

*Vegetarian meat - Available at vegetarian stores. Made from steamed soya bean fibers and flour.

*Gluten - End staple of wheat flour. Rich with protein and truly appetizing. Ways to prepare : Add enough water and little salt to 1kg of wheat flour. Leave on for 2 hours. Wash dough under running water until water is clear. Leave aside in a little water for 1 to 2 hours. Cut into small pieces and fry.

 

  1. Soak yee mee till soft and drained. Set aside.
  2. Heat up 1 tablespoon of oil, add all ingredients then add 1 bowl of water. Stir-fry till well mixed.
  3. Taste and adjust seasoning. Dish out and serve.

Remarks : Yee mee is one of the unique wheaten food in Guangzhou ( China ). Fried yee mee is fragrant.
