Ingredients :
2 tablespoons oil
1 onion, thinly sliced
2 clover garlic, minced
500g (1 lb) green beans, trimmer and cut into lengths
2 sliced fresh ginger, cut into fine strips
1 red finger-length chili, deseeded and cut into thin strips
1/4 teaspoon soy sauce
1 tablespoon rice wine
200g (7 0 z ) bean sprouts
2 teaspoons black Chinese vinegar
2 tablespoons sesame oil
Fresh coriander leaves, to garnish
Fresh ground black pepper, to taste

Method :
- Heat the oil in a wok until very hot and stir-fry the onion, garlic, beans, ginger, and chilies for 30seconds. Add the salt, soy sauce, and wine and stir-fry for another 4 to 5 minutes.
- Add the bean sprouts and stir-fry for 1 minute. Add the vinegar and cook for another 30 seconds. Add the sesame oil, stir to mix, remove from the heat, and transfer to a platter and garnish with the fresh coriander leaves. Sprinkle the pepper to taste.
