Tomatoes with Toasted Pine Nuts

Ingredients :
50g (1/3 cup) pine nuts, toasted
2 tablespoons oil
1 onion, diced
2 spring onions. Cut into lengths
3 ripe tomatoes cut into wedges
1/4 teaspoon salt
1 tablespoon sugar
1 tablespoon soy sauce
Fresh coriander leaves, to garnish

Method :
- Toast the pine nuts in a dry skillet over medium-low heat, stirring constantly, until they turn golden brown, about 2 to 3 minutes. Remove from pan and set aside.
- Heat the oil in a wok over high heat until hot, and stir-fry the onions and spring onions to release the aromas, about 30 seconds.
- Add the tomatoes, pine nuts, salt, sugar, and soy sauce, and stir-fry continuously for 1 to 2 minutes. Remove from the heat, garnish with the coriander leaves, and serve immediately.
